Buttermilk Pancakes With Crème Fraiche Ice Cream And Strawberries

Homemade pancakes taste better and you can always control what ingredients you add to the batter. It is very important specially, if you have kids and want to give them more nutritious food. When you are making pancakes from scratch you can use whole grain flour or oatmeal flour to improve the nutrition quality of pancakes. 

Moreover, you can omit sugar and instead of this add some sweetener if you are on diet. To make perfect homemade pancakes, remember about few things. Buy always fresh ingredients. Fresh flour, eggs, and milk all make a difference. Flour is the main ingredient. It’s amazing how much better fresh flour tastes. Try to buy some higher quality flour from a small or local mill. 

Ingredients: 

For pancake mixture: 

- 1 egg350ml 
- buttermilk
- 225g plain flour
- Fine zest of 1 orange 
- Maple syrup to serve 

For ice cream: 
- 400g Crème Fraiche
- 100g Strawberries
- 50g Caster Sugar
- 75ml Sweet Wine 

How to make pancakes:

In one large bowl whisk together all the ingredients until smooth
Take a large frying pan, and heat it to a medium high heat. Brush the frying pan with one tablespoon of oil.
Pour the batter on the pan, so that you can have about 5 small pancakes per pan.
Cook for about 2 minutes or until the first side is golden brown. Then flip over and cook on the other side until golden brown.
Serve pancakes warm and drizzle them with a spoon of maple syrup. Place a dollop of ice cream and serve. 

How to make ice cream:

First whisk the crème fraiche and half of the sugar for 2-3 minutes to combine. Then add the sweet wine and beat in.
Mash the strawberries with a fork with 25 g sugar. Then stir the strawberries through the cream mixture and pour into a food storage box and freeze overnight.
